

Once both the rice and rolled egg have completely cooled, we can now put everything together.
- Place a sheet of nori on a bamboo folding mat (Makisu).
- Put 6 heaped tablespoons of rice onto the midline of the nori.
- With wet hands, spread the rice evenly over the nori. I would place a hand right at the edge of the nori so that the rice would not spill over. Leave one inch margins to allow space for rolling.
- Line the fillings of the sushi on the rice.
- Suggestions for sushi filling: salmon, cucumber, avocado, egg, carrots, shitake mushrooms … anything really.
Now we’re ready to roll our sushi.
